Susan Wiedemann
Principal, Head of Development
Susan received a Food Science degree from UC Davis and immediately jumped into the field of Product Development. With a lifelong passion for cooking, Susan went back to school at the
Culinary Institute of America in Napa, CA to blend her knowledge of the science of food with the culinary arts to bring a unique perspective to the product development world.
She has spent every moment since researching and developing new products, formulating recipes and delving into manufacturing processes for a variety of major corporations and small entrepreneurs.

Susan has a broad range of experience from regulatory and nutrition labeling, sensory and consumer testing, menu development, food safety and beyond. For the past five years she has lent her experience to the Supplement and infused-products industry consulting in Product Development, Quality Assurance, and Account Management in order to elevate the industry to the highest expectations possible. When Susan is not "working", she enjoys raising her three young kids in Montana, hiking, cooking and gardening.
James Erickson
Head of Market Research
James is an integral part of The New Flavor, spearheading our Market Research services to help our clients develop and execute customer-focused strategies that drive growth. His areas of expertise include gathering, analyzing, and interpreting data to help clients better understand their customers, markets, and industries. James employs a variety of qualitative and quantitative research methodologies to deliver market sizing estimates and forecasts, competitive intelligence, brand tracking, go-to-market strategies, and in-depth customer insights.
Prior to joining the team, James attended UCLA and spent nearly 10 years at Forrester Research in Asia-Pacific, the Middle East & Africa, and North America. While at Forrester, he played a major role in the firm's regional expansion and worked closely with Fortune 100 companies. James went on to work for several startups and leading technology companies, providing strategic consulting services and helping to launch a variety of new products. Outside of work, James enjoys fishing, golf, cooking, and all things outdoors.


Tony Wicke
Senior R&D Consultant
Tony is an accomplished Food Scientist in Innovation & Product Development. He brings The New Flavor progressive experience in product development and commercialization of cellular-based meat products, baked goods, healthy snacks, pet food and treats, dehydrated meat snacks, poultry products, health-based functional foods including dairy, baked items, confections, savory foods, frozen foods, beverages, and supplements. Tony is also a Cannabis subject matter expert including cannabinoid therapy derived from edible products.
In his free time, Tony enjoys snowboarding, mountain biking and gardening. Tony is more recently really into regenerative farming practices.
